Try This Protein-Packed Cheesecake Recipe for a Satisfying Treat That’s Also Healthy

Ingredients

  • 1 1/2 cup Almonds, Walnuts, or both

  • 1/2 cup Dates

  • 1/4 cup Coconut Oil

  • 1/4 cup Dried Shredded Coconut

  • 2 scoops BeFit WHEY – Vanilla Flavor

  • 12 oz Reduced Fat Cream Cheese

  • 1 cup Plain Greek Yogurt

  • 2 Eggs

  • 1 tbsp Stevia

  • 1/4 cup Almond Milk

  • 1/2 tsp Vanilla extract

  • 1/4 tsp Salt

Prep time: 100 minutes (10 minutes prep, 90 minutes to bake, plus 3 hours cooling)

Instructions

  1. Preheat oven to 300°F and grease a 9” spring form pan with extra coconut oil.

  2. Blend first three ingredients on high in food processor until coarse crumbs form. Add coconut oil and blend to combine.

  3. Press the crust evenly into pan.

  4. Blend all other ingredients on high until smooth. Pour into crust.

  5. Bake cheesecake for 1 hour and 30 minutes, or until center is just set.

  6. Refrigerate for at least 3 hours.
