Enjoy These Easy-Bake Egg and Turkey Bacon Breakfast Muffins!

An easy-to-make breakfast option (that still tastes delicious) for weight-loss:

Ingredients:

  • 24 eggs/egg whites (depending on personal preference or calorie needs).
  • Turkey bacon or turkey sausage
  • Diced cherry tomatoes
  • Chopped spinach
  • Shallots/green onion
  • No-salt seasoning

 

Directions

  • Preheat oven to 350°F
  • Spray a cupcake tin with olive oil
  • In a pan, heat your turkey bacon on a medium flame for 4 minutes to cook. Remove from pan and chop into small bacon bits
  • Add bacon and eggs into large mixing bowl
  • Chop all other ingredients, add into bowl and mix. Season when finished
  • Distribute evenly into cupcake tin, filling each slot ½ to ¾ full
  • Bake in oven for 15-20 minutes
  • Remove, let cool
  • Serving size: 1-2 muffins – these are great to freeze or refrigerate for easy meals throughout the week
